This year, Oolithe is a blend of Sylvaner, Pinot Gris, Riesling, Gewürztraminer, Auxerrois & Pinot Blanc! Theo gave the grapes a four day destemmed maceration. Deeper in colour than the 2021, this is bright, fresh and accessible with a lovely texture.
