An unusual and delicious sparkling wine from Romain. He picks the fruit a full at least two weeks before the main harvest, taking away any not perfect bunches. He presses the fruit then ferments very slowly for a couple of weeks. It’s then bottled with around 80g of residual sugar! But because the grapes are picked early the acidity keeps this in a perfect balance. Great aperitif or to have with dessert and pleasingly only 6% alcohol.
