Three sparkling wines to toast Springs arrival.
DOMAINE DES GROTTES - PETIT COIN DU PARADIS 2019
An unusual and delicious sparkling wine from Romain. He picks the fruit a full at least two weeks before the main harvest, taking away any not perfect bunches. He presses the fruit then ferments very slowly for a couple of weeks. It’s then bottled with around 80g of residual sugar! But because the grapes are picked early the acidity keeps this in a perfect balance. Great aperitif or to have with dessert and pleasingly only 5% alcohol.

Chenin with 5 years on the lees. Made in a traditional fashion but the lees aging makes a very fine, quite classic bubbles.

Chenin , 3 and a halfyears on the lees in bottle before disgorgement. Stunningly elegant, fresh and mineral sparkling wine.
